How do you make म:म: अचार..??
My recipe:
I grind Roasted Soyabeans, Peanuts, coconut milk, garlic, Ginger, onion, Sesame,
sesame oil, Grapefruit, Coriander, Tomato, Lemon, Timoor, chicken Cube and Salt pepper and chilli and water. Boil the sauce for 10 minutes and start making making momos.

wow sayami u put lots of things...
for me...I first fry tomatoes (half cut) until it become burnt on outer side (watch for your smoke detector). then i mix all (fried tomatoes, roasted sesame seed, chillies, salt, garlic, ginger, cilantro, little bit of lemon juice, ) in mixer and make slurry.

I like the fresh taste of Tomato so I grind Tomato, Garlic, Cilantro, green Chilli, Salt, Timmoor, Seasame and water.
My veggie Momo contains:
Cabbage, Cauliflower, Carrot, Cilantro,Tofu, Garlic, Bell Pepper, Hot butter, salt etc.

Oh I forgot the main thing, that is onion.
Luture som/soma, if you have a food processor, chop each of them and later chop them in to small pieces, mix them, put all ingredians, put hot butter (1/3 of stick) and mix them really well like flour dough until it is very juicy. Some people like to light fry them but I don't . Unlike some people, I don't really measure the proportions but Cauliflower, Carrot, Cabbage and Onion are the main big items and you can always put some other vegetables. I put the ski goggle while chopping the onions (best way to chop onion in large that I know of). Steam them in steamer. I have also stemed momo over the perforated aluminium foil place and cover over boiling water pot, it works great. Make enough, so you can fry them next day and take as a lunch.

My special MOMO DOUGH

I make a very hard dough so that I can roll it in a Noodle machine
from Vietnamese shop for 12 dollars. It works.
* 1 kilo Flour
* 2 Eggs
* 3 Cups Warm water
* 2 Spoon normal beer ( It make the dough soft when it is cooked)
* Salt to taste...

Sticky MOMO is always problem.
Very good solution ==>
Dip each momo 4-5mm deep in oil just before you put them in MOMOTHAL.
I guarantee each MOMO will jump out of Sauna bath after they are ready.
You do not have to be embarrassed of naked MOMOS anymore.

Those momos look ekdumai mitho, imported from Nepal ho? :-)

Okay here is a short and easy recipe for momo achaar.
1) Heat one or two teaspoon of oil in a pan.
2) Add methi to it (if you like it's taste).
3) Add garlic cloves to it.
4) Add diced tomatoes and saute for a min or two.
5) Add salt and spices according to your taste.
6) Put it in the mixture and add green chillies, blend it and your achaar is ready to serve.

Can you get Timboore in the U.S.? If so, what is it called?

My Tomato acchar is simple: Salt, Tomatoes, Garlic, Cilantro and Red Chilli! Sayami, your acchar sounds fabulous!! Will have to try it someday ;)

You can get Timurr in Chinese shop.
It is called Timur Szechwan pepper (pimpinella anisum).
Price: 1 Packet 50 gm 2.20$.

matribhumi, stale momos do not taste great. Tat tato mitho huncha ni.:-) Btw, it's easy to make. Neither have to make wrappers not have to ground meat, Nepalma justo!

My special momo ko achhar recipe
get almonds peanuts and cashews (sesame works too) grind them in a grinder.. Get a large pan and oil it ............add red whole dried peppers untill black............ add a lot of cut up tomatoes cilantro,TIMBUR,garlick paste....fresh is better add some green peppers(Halapeno works for me) now cook untill semi ledo ..........add water to cook all the way untill ledo.............prepare on the side.............fresh cloves of garlick,.......... cut up leaves of green cilantro, couple more green chillies.add cold water in the blender where the powdered nuts are ....add your cooked tomatoes slowly .......add a little start the blender....add more untill everything is blended and then check for salt add water to the desired level and it is ready.
you can add lime juice and cinnamon, cardamon ,cloves to give that local nepali restaurant taste.....................
