Porcuuuuuuuuu.... Wanna mail me that gundruk before it goes waste? LOL Anyway, this is how I normally make my gundruk ko jhol: 1. Bhuto bhatmas and maseura in a separate pan. (Bhatmas, until most of it "breaks" in the middle and shows their inside white; and Maeura, until they are raato, raato). Put them aside. 2. Bhijao gundruk in a separate bowl...completely soak it, and leave it. (About a MOOTHI-full gundruk would suffice too. Thorai le pani dherai hunchha, so be careful. 3. Methi ra sukya raato khursani furayera pyaj ra lahsun bhutne. (I personally like lotsa garlic...thinly sliced) 4. Add a pinch of BESAAR, if you'd like. 5. Add soaked/drained gundruk and bhuto a little bit. (DO NOT throw away the water that you soaked gundruk in...using the same water later for jhol adds more flavor to the final product!) 6. Thorai jeera ra khursani ko dhulo add garne...bhuto more...make sure the heat is medium low here...natra dherai khaar aunchha. 7. Add sliced golveda to the mix, then add the bhuteko maseura and bhatmas too...bhuto just a little bit more. 8. Finally, add the water that you soaked gundruk in to make jhol...add more water if you desire...bhak-bhaki umaalo for a while -- specially if you wanna make the bhatmas and maseura soft. I would say beskana umalo for a bout 7-10 minutes. In the mean time, add the desired amount of salt. VOILA!!!! Serve with Basmati rice and timmur ra golveda ko chatni...mmmmmm...BHOK LAGYOOOOOO!!!!!!!!!!!!!!!!!!! EASIER WAY: Invite me over for dinner sometime, and I will cook for you! :p eheheh |

BTW, depending on how "good" the gundruk is, i.e., the more sour, the better, you might wanna add a little bit of lime juice to the jhol if the original gundruk is not sour enough. Amilo-amilo type of gundruk ko jhol is da best! Normally, good quality gundruk is kinda amilo by itself, and you wont need to add kagati ko ras! :) |

Hmmmm that sounds so appetizing!! I was wondering what I should do with the gundruk I brought from home a lone time ago--- Now I have my answer. Perhaps somewhere in my weekend menu I shall add gundruk A LA Poonte eeeshtyle. :) Dang, I have one problem.... I don't have maseura. Well, lets see how it turns out minus the maseura. I'll let you know hai Poonte. :) |

The "easier" way above of makin the gundruk ko jhol holds true for you too -- just invite me over for lunch/dinner...I will bring the maseura, bhatmas, and timmur too for you! eheheh...just kidding hau...dont be alarmed just yet! tabasco...kina golveda ko chatni khana paryo? TABASCO bhaat ma muchhera khauna, hunna? eheheh Anyway, in the absence of a blender, you can umaalo the golveda...fatyakka hune gari...kachoura ma rakhera fork le kwach kwach kwach kwach garne ani...one lahsun lai cutting board ma thichne...ani golveda ma misaune...timmur (chha bhane) lai chai cutting board ma nai coffee mug le pisne...silouta ma pisya jasto gari...ani khursani chai...hariyo lai maseeeeeeeeno gari kaatera misaune (unless you have the jaangar to piso it too with the coffee mug) HOWEVER, the best would be to go buy a blender!!!! golveda ko chatni is far better with poleko golveda pisera...and, w/o a blender, you cant really do kwach kwach with a fork to a poleko golveda, like you'd do to usineko golveda. Rato, sukya khursani pani aago ma polera, poleko golveda, timmur, lahsun, hariyo dhaniya haalera blender ma ghwainya garesi...tayaar chet! |

OK, since Procuu is also interested in the timmur ko achar, here's the formal recipe...(my styale re kya!) eheheh 1. Sukya raato khursani lai...chimti (tongues) le chyapera stove ko aago mathi directly polne...about 4 big ones. 2. tyo poleko rato khursani ta timmur (be careful hai...thikka ko halnu parchha...only about 20-25 geda...haat ko paanch aunla ko tuppo le mattra chapakka parda jatti aunchha, tetti) blender ma ghwainya garne...salt pani yeti kherai haale hunchha 3. Golveda polne special tarika (oven ma haalera polae pani hunchha...broil ma rakhera...but there's a longer, but the best way to do it): about 4-5 wota plum tomatoes lai Aluminium foil le completely berne (individually) ani directly stove ko aago mathi rakhne (again, individually)...bela bela ma sides switch gardine...so that ALL sides get polo-ed evenly...I would say about a minute on each side...full aago ma...check it out...you'll really like yestari poleko goldeva!!! 4. tyo poleko golveda lai blender (with timmur and khursani already in it) ma halera feri ghwainya garne 5. add two lahsun ko tukra and hariyo dhaniya too and do more ghwainya 6. finally, add about 2-3 fersh hariyo khursani and do one more ghwainya (even though you've already put sukeko polya khursani, fresh hariyo khursani adds an extra special flavor too!) Paaka ma chhito, khana ma meetho! (dhet, yo ta Maggi ko ad po ho kyara!) eheheh ;) |

Great minds!! :-) Thanks Poonte for the recipe, now where do I find maseura and what kind of bhatmas are you talking about? Dried soybeans that have been soaked overnight?? hamilai kahile timro haat ko khana kahile khuaney ho?? and no, I won't be making a trip to NYC for that, you'll have to come visit me in Toronto and cook at my place. Hell, about time the Canadians were exposed to stuff like Gundruk, Kinema, timmur ko aachaar etc. I kind of like the idea of stinking up Canada with Kinema :-) Kalankisthan, miss me? LOL |

Do we want nepal to remain in gundruk standard for ever? We need to relinquish certain things which are not good for real. Let's face the reality. |

Sense and Raider ji, Ignorance is mother of bliss. I really didn't meant to offend Nepali food. I am fond of it for many, but few. If i tell how gundruk is made, i am sure most of you will be thankful to me. The development of body immune is different, but symply it is unhygine. For many it has been a staple curry because of their majburi and some other reason, but not by their wish. Hisab kitab specialist nai khojne ho bhane ma sath dina sakchhu tapai haru lai. Also, how many of you want to eat kukhura ko andra? |

TehiMeroAashish...Timmur is called Szechuan Peppers and is sold at Chinese grocery stores -- at least I have seen them here in NY. However, their timmur is reddish in color, unlike our black ones, and they do not have as strong smell/tatse as ours. "Khallo" timmur jasto. I do not think Indians use it either -- never saw them at Indian grocery stores. As for the Chinese version of gundruk, yes, I had also tried it after a friend told me about it. Ali guliyo, guliyo laagyo malai ta tyo gundruk ko swad...nameetho. Aafnai Nepal ko jasto ta ke hunthyo, tara pani guliyo swad le eeeeewwwww lagyo. Ani feri MASEURA ra bhatmas pani re??? I have yet to find them at Chinese groceries. Maseura ta, jaangar chha bhane gharai ma pani banauna milchha ni ;) |

Poonte, I LOVE YOU!!! THANK YOU soooooo MUCH for the Gundruk. Just got it at work and the basna is driving me nuts. Q for you: does this gundruk have some sort of seasoning in it? It almost smells like the seasoning packet one finds in noodle packets (like Wai Wai), and I can see some pepper flakes / seeds in it. Regardless, I can't wait to get home and cook it, with or without the bhatmas and maseura. Again, THANK YOU!! And your Kinema and pics are enroute. MMUUAAAAHH!!! A Happy Camper, CH |

Crooked, no, the gundruk is not seasoned with any spices. The few red, dried chilli peepers you see in the packet are to prevent the gundruk from being invaded by "KIDAS" -- the marna nasakya insects that sometimes ruin our precious products! Some people also use timmurs and/or black peppers for the same reason. Waiting for the KINEMA......................... |
