here's a recipe I found on the web. it's not exactly what I had in mind but I guess it'll have to do for now. thought some of you might want to try this out too.... Stuffed Chatamari (Stuffed Rice Pancakes) INGREDIENTS: For Pancake: 2 cups rice flour 2 eggs, beaten 1 cup water 1 cup clarified butter Pinch of salt For Stuffing: 1/2 lb minced chicken (lamb can be used) 1 cup Nepali homemade cheese, crushed 1 cup finely chopped scallion 1 teaspoon garlic, minced 1 teaspoon ginger, minced 1 tablespoon lemon juice 1/2 teaspoon freshly ground black pepper Salt 2 tablespoons cooking oil In a non-stick saute pan, heat oil. Fry garlic and ginger until light brown. Put in minced meat, salt and pepper. Brown the meat and add lemon juice, crushed cheese and chopped scallion. Stir for a couple of minutes. Adjust seasoning with salt and pepper. Reserve in a large plate to cool. In a large bowl, combine rice flour, beaten eggs, water and a pinch of salt to make a smooth batter. In a non-stick frying pan, melt a tablespoon of clarified butter over low heat. Pour in some batter and spread out into a paper-thin pancake. Cover the pan and cook just on one side for 1-2 minutes. Don't turn onto the other side. Reserve in a container with tight lid. Repeat with the remaining batter. On a large plate, put a rice pancake and brush on with some clarified butter. Place one and half tablespoons of stuffing mixture in the middle of the pancake and spread out across the middle. Fold one edge over the mixture and roll up. Repeat with the other pancakes.
