Hi,

Does anyone know how to make kursaniko aachar. I am dying to eat some and I am very interested in making by myself this time(UNFORTUNATELY!!)

a bit confusion ,,,, kursani = khursani (hot peppers????)..

I feel sorry to say that despite being such a chicken expert,, i never made khursani koo chhaaaarrr.. Easy logic behind,, i brought from homeland a bottle of khursani koo achaar,, still have it and enjoy it,, purano baneswor ko cold store bata kinera lyayekoo,, the taste is marvellous. let me read the ingredients writen on the bottle and paste it for u,, here it goes.
Brand name: Navaras CHILLI PICKLE.
Ingredients: Fresh green chilli, Vinegar, Salt mustard seed ground spices and soyabean oil. (no artificial preservatives added). ssssssuuuuuuuuuuuhaaaaaaaaaaaa

i am about to leave to homeland,, but still the achaar is left,,, hmm who wil be that lucky to get it from me niiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiiii,, kasto mithoo chaaaaaaaa.......

Golveda ko achar!
1. Cut large size Golvedas in 8 pieces (4 long pieces and then half them)
2. Dry them in sunlight till the outersurface dries.
3. Make long and small pieces of Aduwa, Lasun and Hario Khursani
4. Grind SARSEW
5. Mix all the ingredients thoroughly and put some oil and salt
6. Keep in a BAYAM applying some pressure!
7. Pour some oil on top of it. Keep the bottle in sunlight. Achar will be ready in two-three days.
8. Invite Sajha members to taste!

Khursani ko achar
Yo ta sarai piro hunchha hau! Golveda ko achar ma alikati badhi halera tyahi khaye hundaina?!

hey1 could anyano tell me how to make mula ko achar ( shisi ma rakhene wala). i have brought mula and also rayo. but don't know what i do next. i know i have to cut mula and put on sun for a while then after what?.........

Thanks pakshastri for your recipe on tantalizing "golveda ko achar", and it's an impeccable one. Just a suggestion, instead of cutting tomatoes and drying them in sun (who knows we all have the ample time and place in doing so), one can simply buy the sun-dried tomatoes at any grocery store. The "achar" might not come out as good as with the fresh tomatoes, but sure comes very close. It might be time saving for people on the run who love such achar.

Dilmaya...follow pakshastri's recipe of golveda ko achar and just use sun-dried radhises (moola) instead of tomatoes, Voila! you have moola ko sinki achar. Enjoy!!

You can also add slender cut dried radhises to Ameelo ko achar and have a different taste.:)

Hehehehe... Soleil spreading his culinary wings. I know he is an excellent chef bao, it's good to see he is becoming chef gurubao too.


This is what I had at his place, a while back:
- Kukhura ko tarkari (Nepali style) ra tandoori.
- Sabji.
- Bhat ra jhaneko daal.
- Rasilo momo with teel ko achaar.
- Kheer

Bhayena, mukh bata ryaal jharera keyboard bhari lagyo. If my computer malfunctions, I'll have to blame Soleil.

Sgy bao, bhayena ba. Timro keyboard mero bayaan ma timrai ryaal bata malfunction hunchha bhane ma ke bhanum, but you can't held me responsible. You can actually sue the manufacturing company for not making it saliva-proof. Does it have a caution anywhere that says "dripping saliva over the keyboard may result in malfunction"?. heheheheh

it was once my idea to sue Nepaliketi(?) for directly helping the saliva of my mouth to drip down and short my laptop. Now if you guys steal my idea of suing for mouth-watering issue, i may sue you for stealing the originality of my idea and then, no golveda ko achar will save your life. :)

Rayo is seed of RAYO KO SAG, has yellow color and is a little larger than TORI! Instead of looking for RAYO, go for TORI ko DANA...

If you use whole cherry tomatoes, it will be Cherry Tomato ko Achar....I doubt!!

KHURSANI KO ACHAR (Take under SG*)
1. Cut green Khursani in two or three pieces...(not in two halves exposing the seed!)
2. Cut LASUN and ADUWA in long pieces.
3. Prepare powder of Methi(a little), Jira and TORI or RAYO.
4. Mix all these ingredients and put salt and BESAR. PUT a little vinegar and OIL. Take care........
5. Put the ingredients in SISI. SOAK the ACHAR in Lemon juice, add a little oil on top.
6. Keep it away..its so tempting...you can not wait for 4-5 days!

i know how to make mashu ko achar.
1. boil, microwave mashu,or put on fire.
2 make a small pieces.
3.mix salt, jira ko dulo, lashun pineko,
4. cut some hariyo pyaj and dhaniya in small pieces and mix them.
5. put some kacho oil.
6.put on refrigetar.
7.u will get tasty mashuko achar.
