Could any of you kindly point me to a University that offers online undergrad engineering courses? Looking for some engineering courses that could be completed solely online and get credited for.

Old Dominion University, Virginia. You can complete the entire undergrad degree online, not only a course.

Also please think carefully before you invest your time and money on them. It's very hard to get an engineering (non IT) job right out of college; online degree might make it even more harder.
